Abstract

The growing need to use sustainable functional foods and environmentally friendly food processing technologies has increased the pace of research-based studies on the use of agro-industrial by-products in the development of value-added nutritional products. Fruit, vegetable, cereal and dairy processing industries create large amounts of residues that are usually tossed aside even though they contain high nutritional value, thus polluting the environment and wasting resources. This paper has designed probiotic fermented drinks using some of the available agro-industrial by-products to facilitate sustainable human nutrition and food waste valorization. The designed drinks were made and fermented using probiotic microorganisms under optimal processing conditions. The developed beverages systematically underwent physicochemical, microbial viability, nutritional, antioxidant and sensory acceptability in the course of fermentation and storage. The experimental study showed that the viability, nutrient availability, and concentration of bioactive compounds of probiotics improved greatly after fermentation. The drinks demonstrated a consistent microbial survival, increased antioxidant effect, and moderate sensory attributes, such as flavor, smell, consistency as well as consumer preference. Moreover, the suggested fermentation method was quite effective to upscale agro-industrial waste and uphold the circular food production and sustainable nutrition initiatives. It also notes the possibility of transforming low-value agro-industrial residues into functional probiotic drinks with enhanced nutritional and health-enhancing qualities. Its results lead to sustainable food design and offer a bright future to scale production of functional drinks which are friendly to the environment and can be used in human health.
